In winter, when the diet lacks fresh vegetables, home preservation will help diversify food and decorate the festive table. Many housewives roll pickled cucumbers, but not everyone is familiar with such an unusual recipe as canned cucumbers in hot chili ketchup. What are the cooking options for this dish will be described later.

- Tightly pack the vegetables into the sterilized container, pour the boiling fill.
- Boil water in a wide pan or bowl, cover with a towel, lower the cans so that the water reaches almost to the edge, but does not fill, cover the cans with lids and keep in boiling water for 10-15 minutes.
- Being careful, pull out the cans using special forceps or mittens, roll up the lids with a preservation key. Place closed cans upside down, cover with a blanket and leave until the brine cools.

- Pour cucumbers with hot marinade removed from the fire, tighten with sterilized lids.
- Leave the cans to cool with the lids down.
Important! Salt with the addition of iodine should not be used for preservation, as it can give the workpiece a bitter aftertaste.
With mustard powder
For lovers of savory snacks, the original version of rolling cucumbers with hot ketchup and mustard powder is perfect. This recipe is good because such cucumbers will be ready after 4 days.

- Rinse vegetables and spices well under running water, horseradish leaves can be torn into several parts.

- In a saucepan, mix the marinade blanks, boil over high heat, then weaken the fire and boil the mixture for 5-7 minutes.
- Pour the vegetables with the ready brine to the top of the cans and close with sterile lids.

- Pour the prepared mixture of vegetables to the neck of the jar and tighten with prepared clean processed lids.
How to store workpieces correctly
Successfully prepared home preservation will be well preserved throughout the winter only in the right conditions:
- pickled cucumbers are perfectly stored in an ordinary apartment, but it is better to choose a dark and cool place - a closet, lower cabinet drawers or a basement are suitable.
- the temperature in the room where the cans are stored should not exceed 25 ° C, and humidity - 80%;
- if the jar was opened, then it should be stored in the refrigerator for no more than 5 days, after which it is better to remove the vegetables from the brine, put them in a tight bag and freeze them. Such a product can be further used for dishes with heat treatment.
