Pickled cucumbers are perhaps one of the most common types of winter conservation. And although any housewife has her own signature recipe for pickled greens, it is difficult to surprise someone with this, due to the popularity of such pickles. But it turns out that even from such an ordinary vegetable, you can cook an appetizer according to the original recipe, pleasantly surprising relatives and guests.
Features pickling cucumbers with aspirin
Before proceeding with the preparation of pickled cucumbers according to a particular recipe, you should pay attention to some features of this preservation method. You should weigh all the pros and cons of using aspirin (acetylsalicylic acid, ASA), and decide whether similar winter harvesting methods are right for you.
Did you know? In ancient Rome, fresh cucumbers were very popular. And since greenhouses did not exist at that time, an ingenious way was invented for growing this vegetable: boxes with cucumber seedlings were installed on the edges of large wheels and turned after the sun.
Benefits
- Among the advantages of this method are the following:
- the use of aspirin contributes to the preservation of taste and crisp structure;
- the use of acetylsalicylic acid prevents clouding of the marinade;
- acetylsalicylic acid is a preservative that reliably prevents the development of bacteria, so canned food with this drug can be stored at room temperature.
Disadvantages
There are diametrically opposed opinions about whether it is possible to use drugs (namely, aspirin is such a tool), for use in canning, and how harmful it is.
- Here are the main negative aspects of the use of acetylsalicylic acid in home preservation:
- after a certain time, as a result of the reaction of ASA and saline, toxic compounds containing phenols are formed;
- aspirin in combination with salt is a threat to the kidneys and gastrointestinal tract, but in this situation we are talking about the use of such conservation in large quantities;
- aspirin dilutes the blood, so people with problems with high blood pressure should take this product carefully (especially in combination with salt);
- frequent use of the drug causes the body to tolerate it, that is, if it is necessary for drug treatment with this drug, it will be generally ineffective, or a very large dose will be required to achieve the therapeutic effect.
Selection and preparation of ingredients
For all of the recipes listed below, the basic set of necessary ingredients is about the same:
- cucumbers
- aspirin;
- water;
- salt.
Depending on the method of preservation, sugar, vinegar, mustard, and citric acid may additionally be included in a particular recipe. Still, even if this is not indicated in the recipe, you can add a slice of hot pepper (in case you like hot pepper).
It is better to crush aspirin tablets before use into powder.
Important! Using acetylsalicylic acid for home preservation, there is a simple rule: 1 tablet per 1 liter of can volume.

Features of storage of blanks
If you cooked pickled cucumbers in full accordance with the recipe, observing all sanitary standards (cleaned jars), then, in the absence of separate instructions, such canned food can be stored for up to 1 year and at room temperature (preferably in the dark).
Important! The quality of water during the preservation of Zelentsy according to this recipe is of great importance - it requires water from a well, pump room, spring water, or, in extreme cases, bottled water. Water from the water supply does not categorically fit!
Although, of course, a cellar or a refrigerator — option is much better. But at sub-zero temperatures, it is strongly discouraged to store a homemade blank: it is fraught not only with clouding and a change in taste, but also with bursting jars.
All the recipes listed above are good in their own way and will find their connoisseurs, depending on their taste preferences. However, it must be remembered that aspirin is primarily a drug, and therefore, like any medicine, it should not be abused.
