Which is better: freeze or dry dill?
There are two most popular ways of harvesting greens for the winter: drying and freezing. Let's try to figure out what is more profitable, to dry or freeze. Any dried grass has a more pronounced aroma than freshly frozen. But to prepare it, you need to spend a lot of time, and to know certain nuances of the process.
Freezing is fast. It is enough to chop finely dill, pack it and send it to the freezer. In this form, it will remain green. Dried grass, on the other hand, loses its color, can be stored without loss of aroma for four months and is able to give the dish a bitter taste. But then it can be added to any dishes, while frozen is usually used for first courses, sauces and omelettes.

Preparation of dill for drying
For the procurement process to be successful, you need to properly collect and prepare the raw materials. It is better to collect dill in dry weather in the morning, but so that the dew has already disappeared. Otherwise, the greens may turn black or a putrefactive process will begin to develop due to the presence of moisture.
The collected raw materials are carefully separated from the roots, sorted out. Yellowed and damaged twigs, as well as foreign debris, are removed. After dill, rinse in cold water and leave to drain. Stems, leaves, umbrellas are prepared for drying separately.
Sprigs can be dried in two ways: whole bunches or finely chopped. The first option is considered more effective when the branches are dried whole, and after the leaves are separated from the stem and ground. Basic drying methods
