It is noteworthy that the main participants in the process of creating cheese - goats of the Mursiana Granadina breed (Spain) - have already arrived at the Mytishchi farm and are actively producing milk with a high percentage of fat content.On average, about two liters of milk can be milked daily from each goat, which not only demonstrates fat content suitable for cheese production (about 7-8%), but also a high proportion of protein in its composition, which positively affects the taste and organoleptic properties of cheese.
We add that we are talking about the production of cheese "manchego", which is highly appreciated by gourmets around the world.It is noteworthy that in the neighborhood with the goats of “Mursiana Granadina” their countrymen will soon settle - sheep belonging to the breeds of “Avassi” and “Asaf”. They will be brought to Mytishchi closer to the end of the summer of this year straight from Spain, and now farm employees are actively preparing stalls and territories for grazing for the arrival of curly "migrants".
